My current book

I am about half way thru this book and have been enjoying it a lot. I checkked it out from my local library.

Rhubarb Dream Bars

Rhubarb Dream Bars...

2 c flour
2/3 c confectioners sugar
... 1 c softened margarine
mix until it forms dough or small crumbs. Press into bottom of 9x13 pan. Bake for 10 min. 350*
Whisk together: 2 c white sugar
1 1/2 tsp salt
1/2 c flour
4 eggs, beaten
4 1/2 c chopped fresh rhubarb
1/4 tsp nutmeg
1/2 tsp cinnamon
Spread evenly over baked crust.
Bake until rhubarb is tender and top is browned...approx 40 min.
I added some strawberries

 

The bars are out of the oven and they took about an hour to bake not sure why but they look and feel done now before the center was not set. I oop and forgot the cinnamon and nutmeg but have a feeling they will still get eaten and with the strawberries in with the rhubarb I am betting you don't notice that I omitted the spices.
