Peach Pie came out great
I got some peaches at Walmart a few days ago left them out to ripen and went to work. Well DH put them in the refrigerator for me he was being helpful. I get it. So time went by and maybe it was good he put them in the fridge as I did not get to pie making as quick as I hoped oh well that is how it goes. Today I got home from work ad decided it was pie day.
SO I looked up my pie crust recipe.
Vodka Pie crust (what vodka) yep it really works wellI
INGREDIENTS 2 ½ cups unbleached all-purpose flour (12 1/2 ounces) 1 teaspoon
table salt 2 tablespoons sugar 12 tablespoons cold unsalted butter (1 1/2
sticks), cut into 1/4-inch slices ½ cup chilled solid vegetable shortening, cut
into 4 pieces ¼ cup vodka, cold ¼ cup cold water
Process 1 1/2 cups flour, salt, and sugar in food processor until combined, about 2 one-second pulses. Add butter and shortening and process until homogeneous dough just starts to collect in uneven clumps, about 15 seconds (dough will resemble cottage-cheese curds, and there should be no uncoated flour). Scrape bowl with rubber spatula and redistribute dough evenly around processor blade. Add remaining cup flour and pulse until mixture is evenly distributed around bowl and mass of dough has been broken up, 4 to 6 quick pulses. Empty mixture into medium bowl.
Sprinkle vodka and water over mixture. With rubber spatula, use folding motion to mix, pressing down on dough until dough is slightly tacky and sticks together. Divide dough into two even balls and flatten each into 4-inch disk. Wrap each in plastic wrap and refrigerate at least 45 minutes or up to 2 days.
Ok I keep my butter in the freezer and so I cut that up into chunks and the same with the shortening I used lard. Mixed it up and then put it in the fridge
I have a new toy a round pastry cloth covered board to roll out pie crust it worked really well.
Then after letting the pie crust chill for a while I got the peaches ready and used a pie recipe that I got off of JO's Country Junction She shared a recipe for a Rhubarb pie filling that she use Strawberries with so I figured Peaches why not.
Then after it was all put together I baked it for 20 min at 400 degrees and about 50 min at 350 degrees and my final results came out like this
